Fresh beans should be kept cold and humid in the refrigerator and used within 5 days if possible. Do not wash before storing, wash them before use. Dried beans should be kept in a cool location like a cabinet.

Boil beans in 1-inch of salted water. Cook green beans 5 minutes uncovered and then 10–15 minutes covered. Cook wax beans 15–20 minutes covered. Cook lima beans uncovered for 5 minutes and then cook them covered for 15–20 minutes. Eat, refrigerate for 3-5 days or freeze for 6 months.

In the pod? Select young tender pods when the seed is first formed. Wash in cold water, snip and cut into 2 to 4-inch lengths. Fresh Whole Beans? Harvest while the seed is in the green stage. Wash, shell and sort according to size. Ready to freeze? Water blanch 3 minutes. Cool promptly, drain and package, leaving 1/2-inch headspace. Seal and freeze.
