Your Edible Fall Décor- Squash!

I don’t know about you, but I love putting up seasonal decorations. You know what I don’t love? Taking them down. I love fall, because I get to put out as many decorations as I want, and I don’t have to take any of them down later…. Because I eat them.


Pumpkins are the go-to Halloween decoration, but there are SO many beautiful squash varieties that can be used too! Winter squash are great because they can sit for a majority of the fall season, some lasting from 2-6 MONTHs before being eaten. You can leave them on shelves, countertops, or other areas around the house that you like to use for décor. Avoid putting them in direct sunlight or overly warm areas of your home, as they will not last as long in these spots. Just look at how pretty some of these varieties are; you will have no shortage of creative inspiration.



 

So now you know you can eat them, but do you want to eat them?

Absolutely, you do!


They are as delicious as they are decorative! Here are my top 3 favorite squash to decorate with.

 

Acorn Squash 

Acorn squash is a nutty squash. I like to roast in the oven. The recipe calls for brown sugar, but I use maple syrup to incorporate more fall flavors. I season with sage or nutmeg. You can store acorn squash for 2-3 months in cool spaces with indirect sunlight.

 

Delicata Squash 

Delicata squash is a buttery, sweet squash. Top it with parmesan and roast it for a crispy fall appetizer. One thing I love about delicata squash, the skin is thin and easy to eat. Because they have thin skin, you’ll want to check them every week to ensure they aren’t getting soft. They can last up to two months but eat them before they develop soft spots or wrinkles. 

 

Butternut Squash 

Butternut Squash has a flavor that resembles a sweet potato or pumpkin. They’re hearty and versatile. I like making pasta sauce for a yummy butternut squash pasta that is my seasonal comfort food. I have shared it with even the pickiest of eaters and gotten high marks. You could also go simpler and roast for a delicious and easy side dish. Butternut squash can be stored for 2-3 months, but sometimes longer!




 

BONUS: Roast the seeds of your squash and season for a crunchy snack!


BONUS BONUS: You can still put out pumpkins! Just be sure to buy the edible varieties and you can turn into pumpkin pie, pumpkin roll, or any other pumpkin staple when you are done!
